Zucchini Bread
INGREDIENTS
3 cups flour
1 tsp salt
1 tsp baking soda
3 tsp cinnamon
1/4 tsp baking powder
3 eggs (room temperature)
2 cups sugar
1 tsp vanilla
1 cup vegetable oil
3 cups grated and lightly drained zucchini
1/2 cup melted butter (for crust)
3 tbs cinnamon and sugar mix (for crust)
INSTRUCTIONS
Preheat oven to 350°F. Prepare two 9x5 bread pans (or three smaller ones) with butter and flour or use non-stick baking spray.
Sift together flour, salt, soda, cinnamon and baking powder; set aside.
Beat the eggs in a separate large bowl then add sugar, vanilla, and oil.
Add the dry ingredients, mix well, and fold in the zucchini.
Bake for 1 hour or until a knife inserted in the center of the bread comes out clean. Once done, immediately pour the melted butter over the bread loves (divided equally between the two or three pans) and dust with the cinnamon and sugar mixture to create the sugar crust.
Cool 30 minutes in pan, then turn out onto wire racks to cool completely.
