Peach tart

INGREDIENTS

  • 1 sheet of puff pastry (slightly thawed)

  • 3 large peaches

  • 3 TBS sugar

  • 1 TBS flour

  • 1/4 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1 egg (beaten and at room temperature)

  • 2 TBS sliced almonds

FOR ICING

  • 1 cup powdered sugar

  • 3 TBS milk

  • 1/4 tsp vanilla

INSTRUCTIONS

  1. Preheat oven to 400°F.

  2. Stir sugar, flour, spices and sliced peaches, and gently toss to coat peaches. Let stand for 5-10 minutes so peaches become juicy.

  3. Cut the puff pastry into small squares - either 9 or 16 squares depending on your preference.

  4. Place the peach slices on the puff pastry squares, then brush the sides with the egg wash and top with sliced almonds.

  5. Bake for 15 minutes or until the outer edges are just caramelized. Cool for a few minutes before serving with icing.

  6. Optional icing: whisk ingredients together and drizzle over baked tarts. For a thicker icing, use less milk and slowly add more until you reach desired consistency.
